Now Open: Sancho Pistola’s Serves Up Creative Mexican Fare, Craft Brews And Fine Cocktails In Fishtown

In case you haven’t heard, Fishtown has quickly become one of the coolest sections of Philadelphia thanks to an influx of quality restaurants, inventive bars, impressive music venues and forward-thinking art galleries.

Now that Sancho Pistola’s has opened on Girard Avenue just steps from the El station, the neighborhood has one more eminently appealing destination.

The second venture for partners Casey Parker, Joe Gunn and Adan Trinidad, Sancho Pistola’s is set to supply Fishtown with the same high-quality modern Mexican fare, choice craft brews and cocktails that’s earned Jose Pistola’s in Center City recent raves.

Puebla, Mexico-born chef Adan Trinidad took the reins in Jose’s kitchen last fall, raising the culinary bar with spot-on renditions of updated Mexican classics like carnitas, tortilla soup and more. The chef is no stranger to Philadelphia kitchens, with experience working at such top spots as Alma de Cuba and El Vez, in addition to his time with Richard Sandoval at Pampano and Zento in New York.

At Sancho — the name is a Spanish slang term for “the other man” — the team lays out a lengthy menu of solid standards like fresh guacamole, soft tacos, loaded nachos and spicy wings.

Alongside the crowd-pleasing favorites, though, look out for more epicurean options including lovely raw bar selections, tiraditos and ceviches, and creative takes on staples like Brussels sprout leaf tacos, scallop and roasted cauliflower tacos, mole meatball steamed buns, and much more.

Pair the inspired Mex with a quaff from the substantial beverage menu, which offers a deep craft beer selection on tap and in the bottle, as well as a curated list of cocktails, tequilas and mezcal.

Starting today, the kitchen will open weekdays at 4 p.m. and 11 a.m. on the weekends, remaining open until 1 a.m. daily. Look out for brunch service to begin on Saturday, February 8 and outdoor service, too, once the weather warms.

This second spot in the Pistola family is sure to be a neighborhood sweetheart.
