Now, there’s even more reason to fly down to Red Owl or Stratus.
This month, the contemporary American eatery welcomes new executive chef Jorge Chicas to take charge of all culinary operations, including the bi-level Red Owl, Stratus and all hotel catering and banquet operations.
Chef Chicas is equal to the task, with a résumé that includes top roles in Washington, D.C. and Los Angeles with world-renowned chef José Andrés and recognition from the likes of the James Beard Foundation, Esquire, GQ and the Los Angeles Times.
In Philadelphia, the chef has plans to overhaul the Red Owl menu later this winter. Though the all-American vibe of the restaurants isn’t going anywhere, diners can expect Chicas to put his mark on the menus.
Diners can expect farm-fresh ingredients and a hint of influence from his native El Salvador — think skirt steak with chimichurri sauce.
Red Owl Tavern is open daily, and is a participant in Center City Restaurant Week, which runs January 19-24 and 26-31.
