With Percy Street Barbeque opening on South Street in a few weeks, the restaurant’s owners (Michael Solomonov and Steve Cook, also of Zahav and Xochitl) and chefs (including Marigold Kitchen alum Erin O’Shea) took a trip down to Texas to try some authentic barbeque and brisket.
They put a pretty amazing video documentary together, which you can watch here:
“It makes sense to us,” said Chef Solomonov, who we interviewed for our With Love Letters series. “If weâ€™re going to open a Texas-inspired barbeque restaurant, (we should) send a bunch of us to Texas to go eat. Thatâ€™s the basis for our quality control and for our standards.”
