Served as a large plate with collard greens and mac & cheese, Meritage’s tender, juicy, twice-fried Korean Fried Chicken is covered in a sweet and spicy sesame glaze. Go ahead and ditch your fork.
The $18 dinner will be offered every Wednesday and Thursday. According to Chef Anne Coll, raised locally in Media, the size of the restaurant’s kitchen (comparable to an average city apartment’s kitchen) prohibits her from being able to offer the chicken on a nightly basis. But it’s well worth the weekly wait.
Chef Coll’s experience blending traditional French techniques with Asian flavor profiles (which derives in part from her role as executive chef for six years at the French-Asian fusion institution Susanna Foo’s on Walnut Street) sings no more brightly than with this dish.
