Volvér At The Kimmel Center Reopens For The Season Wednesday, September 2 With Fresh Menus

After a summer respite, chef Jose Garces’ Kimmel Center showpiece will be back and even better than ever for the new performance season.

There are two completely new — and pretty thrilling — menus to choose from though Volvér continues its tradition of cutting edge cooking.

The eight-course repast costs $95 per person and includes a first course of morcilla sausage with chimichurri, nigiri with nori and Carolina gold rice; and a cannoli(!) filled with salmon mousse and flavored with caraway and mustard flower.

From there, it only gets more intriguing: a course of sun gold tomatoes with sorghum and whey vinaigrette; a taste of lamb tartare with pickled blueberry; swordfish with beet bordelaise and black garlic.

Dessert features two courses: lime sponge cake with plum granita; and chocolate cremaux with mango “pearls” and cashew.

The 12-course version, for $150, goes still further with a “Dippin Dots” course of beets, crème fraîche, caviar and sturgeon cream; heirloom squash with panela cheese, concord grape and fermented pumpkin jus; and guinea hen with smoked swiss chard and foie gras cream.

It also adds a parsnip brûlee cake with hazelnut cream and orange to the dessert mix.

Reservations are being taken now and service at Volvér begins tomorrow, September 2.
